CWS Smell rich and slightly floral (bergamont) Blueberry juicy balanced mouth feel good body just a hint of dark bottom note on tail
La Huealla Nicaragua
Country: Nicaragua Farm: L Huella Region: Arajuez, Matagalpa Altitude: 1,300-1,400m Variety: Ethiosar Process: Fully Washed Tasting Notes: Red currant, Orange, Mint, Green apple, Spice, Bitter caramel, Brown sugar, Malic acid, Round mouth feel
Smell: didn’t really smell Taste: actually very easy to drink, sweeter and more balanced than the forward notes would have experienced, apple tartness. Nice mouth feel, right amount of body with some dark notes, but not short tail, not the most pleasant aftertaste. Pretty good, but not as tasty as t he Helsar de Zarcero
Helsar de Zarcero, Finca Rola Costa Rica
Country: Costa Rica Farm: Finca Rola Region, Llano Bonito, Narajno, West Valley Altitude: 1,600-1700m Variety: Caturra Process: Yellow Honey Tasting Notes: Peach, Apple, Pear, Orange, Floral, Sugarcane, Bright acidity, Almond, Round mouthfeel, Long sweet
Standard hybrid recipe but with Brita water
Smell: very light slightly, floral, “fresh” smell Taste: Light, but complex, very sweet, stonefruit juiciness, sweet fruitiness, with a hint of dark notes
Incredibly easy to drink, very tasty
Watchota CWS Ethiopia Honey
Country: Ethiopia Farm: Watchota CWS Region: Tulis, Idido, Yirgacheffe, Gedeo Altitude: 1900-2100m Variety: Heirlooms Process: Honey Tasting Notes: Muscat, Peach, Melon, Plum, Cherry, Raspberry, Jasmine, Min, Cane sugar, Syrup, Clean Mouthfeel, Well Balanced
Standard Hybrid method (2:15 steep, finished drawdown about 4min)
Smell: very light, floral, slightly sweet
Taste: tea-like, light muscat if you swirl, very clear w/ a fruity finish
Very easy and pleasant to drink, no off notes, balanced, but light
El Sauce El Salvador
Country: El Salvador Farm: El Sauce Region: Chalatenango, La Palma Altitude: 1600m Variety: Pacamara Process: Natural Tasting Notes: Cranberry, Fig, Apple, Dark chocolate, Cane, Clean acidity, Round mouth feel, long aftertaste
Standard Hybrid method (2:20 steep, finished drawdown about 4min)
Smell: Rich and sweet, like sugar/molasses
Taste: Tart and clean on first sip but if you move it around, you get a lot of great sweetness. It has a stonefruit, specifically plum taste to me and a sweet finish (not quite as dark as molasses, maybe more like brulee)?
Quite interesting, but easy to drink and tasty. Maybe not enough body and mouthfeel for an every day cup, but I like it better than the La Curva
La Curva Peru
Country: Peru Farm: La Curva Region: Cusco Altitude: 1910m Variety: Geisha Process: Natural 2023 cup of excellence #17 - 88.18pt Tasting notes: Cranberry, black currant, cherry, plum, raspberry, chocalate, brown spice, caramal, floral, vanilla, tropical fruit
Standard Hybrid method (2:15 steep, finished drawdown about 4min) Smell: Mild geisha smell, slightly sweet, pleasant Taste: Lighter and more acidic than expected, citrusy (lemon, almost grapefruit) light mouthfeel, slightly astringent aftertaste but w/ caramel notes; Gets a bit more chocolately as it cools Not bad, but not my fav, will revisit second cup after

Using a variation the Tetsu Kasuya Super (New) Hybrid Method (https://www.youtube.com/watch?v=4FeUp_zNiiY)
- ~320g of water to 95C
- 50g CLOSE/OPEN warm/rinse (drain and discard)
- 15g of beans at 6 (medium; slightly course) on Ode w/ V2 Burrs
- Hario Switch
- 0:00-0:30 CLOSED 50g bloom
- 0:30-0:45 OPEN drain
- 0:45 OPEN 100g (+50g) first pour (~10s w/ gooseneck)
- ~1:30 OPEN 150g (+50g) second pour (~10s w/ gooseneck)
- Add 100g of water to lower water temp to ~70C
- 2:00 CLOSE 225g (+75g) immersion for 45s after full drain
- 2:45 OPEN drain
- 3:30 done
The differences between my previous hybrid method:
- Most important, the bloom is closed
- There is an extra pour stage
- Usually I grind relatively fine at 4.2 but have moved coarser
- 45s vs 30s immersion
- 225g vs 200g total
- Ending time basically the same
