Wush Wush vs Geisha

Anti-Maceration - both drained quicker than usual, very bright, bordering on astringent Uh, initial reaction is … not a fan?

Wush Wush - smells a bit peanut buttery/creamy, almost like mashed potatoes and butter taste is like grapefruit, juicy, but with a more rounded mouthfeel and a slight richer note as an aftertaste.

Geisha - candied/flowery/fruity smell. very bright and juicy when drinking, first note is floral, but like in an outdoor garden type of way, hibiscus. not so pleasant sourness if you move it around your mouth.

To try:

  • Grind from 4.33 to 3.66
  • A/B the Geisha
    • Double 600/200 for stable temp @ 92C
    • Double 600/200 for stable temp @ 99C

99C definitely worse, undrinkable 92C is better drain didn’t go

try 85C (300g) @ 3 - worse than 92C.

Panama Iris Symmetry V3 Jasper

100g for ¥8,500 Roasted 1/18 Review 3/7, 3/13 Smell: the beans smell good, slightly bready sweetness, maybe a hint of candy/chocolate Brew smell: a bit rich/complex smell, more like a slightly darker roast than a traditional geisha Brew method: Kasuya Devil’s Recipe

  • 15g, 50g/100g/220g - 98C, 96C pour, 75C, didn’t drain until 2:20 oops
  • 15.8g, 51g, 108g, 212g - 98C, 95C pour, 70C at 1:16, 1:46 drain (finished around 2:30, ) Taste:
  • 3/7: Very juicy/fruity, has a bit of a wine and plum taste with an tangy acidic finish. Not my fav flavor profile tbt. When cold has more of a chocolate taste, actually way tastier.
  • 3/13: Better brewing this time. More mellow and pleasant w/ this second pour, less extraction got way less astringency. Still a big tangier than I like, notes still stand. Very juicy.

Region: Volcan, Chiriqui Producer: Jamison Savage, Sasa Sestic, Elvin Siew Variety: Geisha Apple, Raisin, Sake, Jouji, Chocolate, Grape Process: CM Natural

Colombia Inmaculada Signature Sudan Rume

100g for ¥8,200 Roasted 1/4 Review 2/27 Smell: a good smelling bean, has a longan like, slightly bready sweetness Brew smell: Rich floral, slightly sweet/caramel Brew method: Kasuya Devil’s Recipe (15g, 60g/103g/207g - 98C, 96C pour, 70-72C) Taste: clean cup, medium body, very tangy taste but with a sweet tail, I can see the grape/plum comparsion, has a darker sweet chocolatey undertone and a short bitter tail I’ve never had a Sudan Rume, so wanted to try it.

Region: Pinchinde, Valle de Cauca Producer: Holguin Family Altitude: 1700-2000M Variety: Sudan Rume Process: Natural Notes: kyoho grape, plum, violet, 95% chocolate, candy, clean

Ordered 7/8 from Manhattan Coffee Roasters, Amsterdam at Nick’s recommendation. Shipping was flat rate at a certain point, so I just ordered more since looked super interesting

Colombia Nestor Lasso Ombligan Natural (Competition)

  • €26 - 250g
  • Tasting notes: vanilla, cherry cola, haribo bears

Five years ago, Nestor Lasso and his brother Adrian took over their family farm and made the leap into producing specialty coffee with a desire for experimentation and outstanding quality. The two young brothers have teamed up with Johan Vergara to create the farm “El Diviso”. Together, this team of three passionate and brilliant-minded producers are putting out some phenomenal coffees that are truly worthy of high recognition.

Nestor tells a fascinating story about his journey in specialty coffee talking about passion and the role that plays in producing specialty coffee at the highest level. This ideology shared among the entire team at El Diviso is apparent through this natural Ombligon.

When the coffee is harvested, the cherries are placed into open plastic tanks to oxidate for 48 hours. During this oxidation, the cherry must (extract produced from oxidation) is constantly recirculated. The coffee is placed in cold water to remove the floaters, then washed with 50 degree water to create a thermal shock effect. Doing this loosens the molecular structure of the coffee before starting the anaerobic process. Before the airtight seal is closed, brewers yeast is sprayed over the top of the cherries at a ratio of 1:5. The coffee is then left to ferment for 38 hours before being left to mechanically dried for 12 hours to dehydrate as fast as possible. Lastly, the dehydrated coffee is left to finish drying in masquesinas for about 15 days.

  • Beans have a really strong, almost intoxicating sweet raisin, rum raisin smell, has a slight reminder of frosted cake sweetness.
  • Taste is lighter than expected for such a rich smell, very juicy and light top end, reminded me of the tropical fruit taste of last year’s Nestor Lasso - more guava or papaya top-end the cherry, but overall has taste that reminds you of a home-made fruit cola. Pretty wild. (has a slight astringency, but on the bottom end). Will have to taste again and make some more notes. Super unique tasting.

Colombia Nestor Lasso Typica Mejorado Washed (Exceptional)

  • €16/250g
  • Notes: raspberry, rose, shortbread

Nestor and his brother Adrian took over their family farm and made the decision to branch out into specialty coffee. The two brothers have teamed up with Johan Vergara to create the farm “El Diviso”, in the Huila region of Colombia. This young team of three is already making waves in the specialty coffee scene.

Together, these three have been able to produce an amazing Typica Mejorado that is sure to have you wanting more. When the coffee is harvested, it is then pulped and left oxidizing with the mucilage for 12 hours. It then underwent submerged fermentation in 28-degree water for 8 hours. To complete the process, the coffee was washed with hot water at 65-70 degrees to create a thermal shock effect. The coffee is dried to a humidity of 11%, which took 18-24 days.

  • Mild, slightly sweet, slightly bready smell for beans
  • Very strong raspberry/blackberry smell
  • And similar taste, more rasberry juiciness, but has a bit more body than other Nestor Lasso and a hint of vanilla roundededness, but a tangy aftertaste
