Taiwanese Beef Noodle Soup (臺灣牛肉麵, Niu Rou Mian) is one of the most famous Taiwanese dishes and something I grew up with at home (although it turns out it was a recent invention, brought by Sichuan KMT).
In my research, Richard Ho’s Recipe (Ho Foods) seemed to mirror my goals for a rich, home-style taste that has been hard to find in some places.
